Egg White Crêpe/Tortillas & A Chicken Strawberry Wrap#SundayFunday

This Fresh Egg White wraps are filled with juicy grilled chicken, some fresh veggies, Homemade Keto Pasteurized Egg Mayonnaise and not to forget the strawberries!

In keto sometimes you just crave for a wrap, then this for you made with really fresh ingredients, so its super light and refreshing.
Makes 3
Ingredients

3 Large Egg Whites
1 Tablespoon Gelatin powder

Method
In a bowl add the egg white and sprinkle the gelatin on top let it sit for 10 minutes. Use an immersion blender to get the batter smooth and a bit frothy. 
Heat a non stick pan and spray or brush lightly with the oil/cooking fat of your choice. Pour 1/3 of the batter onto your preheated griddle and spread gently with a spatula until the wrap is 5-6 inches across. Be careful not to leave any thin spots. Allow the wraps to cook for 2 minutes or until the edges start to curl up and the bottom becomes lightly brown. Flip and cook for a minute more.  
Repeat with the rest of the batter.

For The Keto Chicken Strawberry Wrap
Ingredients
Lettuce
Grilled Chicken - shredded
Sliced Tomatoes
Sliced Cucumber
Sliced Strawberries
Homemade Keto Pasteurized Egg Mayonnaise
Salt & Pepper to taste

Method
Take a egg white crepe, place lettuce in the center, top it with sliced tomato, cucumber
Then add the grilled chicken and sliced strawberries
Then add some homemade keto pasteurized egg mayonnaise, a dash of salt and pepper to taste.
Wrap it and enjoy!!

Keto Strawberry Microwave Muffin#Improv

This Keto Strawberry Muffin fits perfectly into that sweet spot for a sweet craving. It makes a perfect muffin for quick breakfast or dessert.
This muffin is moist, top it with whipped cream and you have a delicious dessert.
It’s no dissimilar to a mug cake (it is, in fact, a mug cake) and you can make this in your oven or microwave.
Serves 1
Ingredients

30 grams Almond Flour
½ Teaspoon Baking Powder
1 Egg
15 Grams Butter - melted
2 Teaspoons Keto Sweetener
½ Teaspoon Vanilla Extract
¼ Teaspoon Cinnamon powder
20 Grams Strawberries -1 Big chopped

Method
In a bowl, add in the melted butter (or microwave for 15 seconds to melt it), add the Keto sweetener, vanilla extract, and the egg and give it all a good mix till well combined.

Now add your dry ingredients to the bowl - the almond flour, baking powder and cinnamon powder and mix well.

Add in the chopped strawberries and gently fold through the mixture.  
Grease an microwave proof ramekin with butter and pour in the batter. Top with a couple of strawberries.  Microwave on high for 90 seconds. If a toothpick poked through the center comes out clean, your muffin is done.
Serve warm or chilled, depending on your preference.

Nutella Filled Crepes#Improv

This Nutella Crepe is an easy and delicious with a rich chocolate hazelnut spread. Nutella is a rich, smooth, and creamy chocolaty spread, it's so delicious and finger licking.
Makes 7 Crepes - 10"  Non Stick Pan 
Ingredients
¾ Cup All Purpose Flour
2 Eggs
1 Tablespoon Sugar
½ Cup Milk
¾ Cup + - Water
¼ Teaspoon Vanilla Essence
1 Tablespoon Olive Oil
A Pinch Of Salt
For The Filling
Nutella/Chocolate Hazelnut Spread As Required
For Garnishing
Sliced Strawberries
Chocolate Sauce

Method

Add all the ingredients for the crepe in a blender blend till smooth, check the consistency of the batter add water accordingly. Then strain the mixture for a smooth consistency. This will remove any lumps. Rest the batter for a least a 30 minutes to an hour. 
After resting, the batter will thicken up, to ensure a thin consistency, whisk in a little water at a time. Heat a 10-inch nonstick pan over medium flame, grease it with desi ghee and wipe it clean with a kitchen paper towel.  Simply pour ¼ cup of batter into the bottom of the pan, lift, tilt, and quickly swirl to create a circular shape.  
It only takes a minute to set on the stovetop, then lift it with your hand on to lightly greased plate.
Repeat the process with the remaining batter, stack them on top of each other to keep warm.
    
Spread 2 tablespoons of Nutella over each crepe.    
Fold the crepe in half, then in fourths, so it resembles a fan/triangle. Likewise make rest of the crepes.  
Then garnish the top with sliced strawberries and a drizzle of chocolate sauce or whipped cream.

Fresh Strawberry Bread#BakingBloggers

If you love fresh fruit breads then this quick bread recipe comes together in just 10 to 15 minutes. Make this with fresh or frozen strawberries, a prefect tea loaf or breakfast bread. It's soft and delicious.

Makes One Loaf
Ingredients

1 Cup Frozen or Fresh Strawberries - sliced
1½ Cups All Purpose Flour
1 Cup Caster Sugar + 1 Tablespoon
½ Teaspoon Level Salt
½ Teaspoon Level Baking soda
½ Cup Melted Butter
2 Tablespoons Oil
2 Eggs
½ Cup Chopped walnuts
Method
Preheat oven to 180°C.
Butter and line one 9 x 5-inch loaf pan.
Slice strawberries and place in bowl. Sprinkle lightly with one tablespoon sugar and set aside while preparing batter. 
Combine flour, sugar, salt and baking soda in large bowl, mix well.
Blend oil and eggs into strawberries. Add the flour mixture, blending until dry ingredients are just moistened. Stir in walnuts (reserved a few to sprinkle on top). Pour the batter into pan sprinkle the walnut. Bake in preheated oven until a tester inserted in the center comes out clean, 45 to 50 minutes.
Let cool in pan on wire rack for 10 minutes. Turn loaf out of pan and allow to cool before slicing.

SOP Mocktail# Foodieextravaganza

SOP Mocktail! is a Pineapple, Orange, Strawberry Mocktail.
This is a fun drink that the family can enjoy, with all the nutrients and fiber . This is a thick mocktail, I have not strained it, taste awesome and filling. Have this instead of mid time snack and stay healthy. If strawberries are out of season you can omit it and use only strawberry crush. This is cooling summer drink.

Makes 2 Tall Glasses
Ingredients

2 Orange - I used Kinnow - peeled and sectioned
5 Thick Slices Fresh Pineapple - cubed
4 Strawberries - sliced - fresh or frozen
3 Tablespoons Strawberry Crush or Sugar as needed
Ice Cubes as required

Method
Peel the orange and separate the segments.
Remove the pineapple skin and cut in cubes.
Blend the ingredients in a food processor and serve chilled.

Chicken Legs With Strawberry Balsamic Glaze & Spicy Potato Wedges#BakingBloggers

This is a platter that combines many elements which are dishes, are very simple easy to follow recipes. So here are dishes Chicken Legs With Strawberry Balsamic Glaze, Spicy Potato Wedges and Nepali Style Vegetable Pulao, which make a complete meal.
Chicken Legs With Strawberry Balsamic Glaze
Ingredients

3 Chicken Legs
½ Cup Strawberry Balsamic Sauce
1 Tablespoon Mustard Oil
For Marination
1 Tablespoon Homemade Pizza Seasoning
½ Teaspoon Salt or to taste
¼ Teaspoon Black Pepper powder
¼ Teaspoon Red Chilli Flakes
1/3 Cup Yogurt - whisked
1 Tablespoon Mustard Oil 

Method
Mix all the ingredients for the marinade and coat the chicken pieces well. Allow to marinate in the refrigerator overnight or for at least 4-6 hours.
In a large frying pan, smear it with mustard oil. Place the chicken legs and sear on high flame for 2 minutes on each side or 
till the chicken legs get a browned on both sides. 
In a baking dish, add a tablespoon of mustard oil. Place the chicken thighs and smear strawberry balsamic sauce/glaze on top of the chicken legs, cover with a foil and bake at 200°C in a preheated oven for about 12 - 15 minutes. 
Then remove the foil and bake again for 6 minutes, after 3 minutes flip the sides of the chicken legs and it's done. 

Spicy Potato Wedges
Ingredients

3 Medium Potatoes - unpeeled, cut into wedges
1 Tablespoon Oil
1 Teaspoon Cumin Powder
1 Teaspoon Red Chilly powder
½ Teaspoon White Pepper powder
½ Teaspoon Heaped Sea Salt or to taste
½ Teaspoon Amchur Powder 

Method
Wash and scrub the potatoes clean. Then cut them into wedges.
Bring a large pan of salted water to the boil and add the potato wedges. Boil for 5-6 minutes, then drain. Place the parboiled potatoes on a baking tray, drizzle with the oil, then toss to coat with all the spices ( I also added few parboiled broccoli florets).
Put the tray in the oven and roast at 200°C in a preheated oven for 20-25 minutes or until golden and crisp.
This platter with Chicken Legs With Strawberry Balsamic Glaze, Spicy Potato Wedges and Nepali Style Vegetable Pulao, made a complete meal.. Enjoy!!

Homemade Strawberry Balsamic Sauce

My daughter went for a holiday to Panchgani and came back with loads of organic large sweet strawberries. They were super delicious, most we enjoyed eating and few I, freezed .
The other day while watching television seen this recipe and decided to recreate in my kitchen. Tweaked this recipe to my taste and turned out finger licking. You will love the tartness of the strawberries, lemon zest, balsamic vinegar and sweetness the sugar.
Fruity, tangy, sweet and bright red color this sauce is finger licking.

Ingredients
½ Cup (125ML) Balsamic Vinegar
20 Large Frozen Strawberries - roughly diced
3 Tablespoons Level Brown Sugar
¼ Teaspoon Sea Salt
Zest of One Big Lemon

Method
The frozen strawberries when  thawed, it was mushy and left a lot of juice. In a sauce pan add the juice of the strawberries along with balsamic vinegar and bring it to a rolling boil then, reduce the flame a let it reduce into half. Now add in the strawberries, sugar, salt, and lemon zest. Mix well and bring this again to a rolling boil on medium high flame. 
Then reduce the flame until strawberries have released their juices and softened, let this simmer on very low flame until the sauce thickens. Keep stirring in between a bit. Allow to cool. It will stay in the refrigerator for a week or two. If you freeze this sauce it remains good for a long time, the best thing about freezing this sauce that it does not get ice granules, remains in sauce form only.  
This strawberry balsamic sauce it's finger licking.. ready for a multitude of uses.

Strawberry Lemon Basil Pasta Salad#Improv

Strawberry Lemon Basil Pasta Salad is a healthy and delicious dish that will brighten up any plate. A pasta side dish made with strawberries, lemon and fresh basil , it's perfect for a light and filling  summer meal. A  simple salad wherein the dressing can be made a day ahead and tossed  just before serving.
Ingredients 
2 Tablespoons Olive oil
2 Tablespoons fresh lemon juice
1 Tablespoon Balsamic vinegar
1 Tablespoon Sugar
1/2 Teaspoon Sendhav Namak / Himalayan Pink Salt
1/4 Teaspoon Red Chilly Flakes
1/4 Teaspoon freshly ground black pepper
2 Cups Campanella Pasta
A Handful of Fresh Baby Basil leaves
2 Cups Sliced Strawberries
1 Lemon - cut into round slices

Method
Boil the pasta in water with a tablespoon of sea salt when the water comes to a boil add the pasta and cook it on high flame till al dente. It took 10 to 12 minutes to cook. Drain and cool it completely. 
In a large bowl, whisk together oil, lemon juice, balsamic vinegar, sugar, salt and pepper until sugar is dissolved. Add pasta, basil, lemon zest and strawberries, toss to coat.
Salt and pepper to taste. R
efrigerate covered until ready to serve.  
Serve garnished with a lemon slices and enjoy.
